
Jen Kaylor came over on Monday evening with her family and they picked my berries and enjoyed the backyard. Her kids are so cute and we has such fun. Logan was so polite, he even thanked me for giving them the opportunity to pick the berries.
On Tuesday I made the best dish. I made a wonderful tomato sauce with our own tomatoes and onions. Then I use the julienne tool that Jen brought over from Pampered Chief from the party I had ordered from. I used it on a Zucchini making long noodle looking zucchini and put it into the sauce and added half of a cooked spaghetti squash. I added some ground Turkey. It was so good.
On Wednesday, we got to watch Hailey and she went out picking the berries and was so proud of her work. She then proceeded to eat to bowls for the Spaghetti squash dish. She loved it too. I got a kick out of her playing in her own little world with the dolls. She is so much fun to watch. She has such an imagination.
Friday night Trenton, Martha, and Amber came over of dinner and to pick berries and vegetables to eat. He has stopped drinking pop and working out at the YMCA and I think he is down to 238 lbs. I hope he keeps it up. He is also going to be on Channel 6 next Sunday morning, sometime between 6 and 10 because he again has earn the most money. He is going to present Lowe's check to the MD society.
For dinner I was really excited about how the Blackberry crisp turned out. My sister sent me this recipe for the best Blackberry filling for a pie. But since pie crust I don't like to make and I have rhubarb I decided to make the filling and then add rhubarb and use the same topping that I use for the Strawberry Crisp. I turned out so good. I thought I would share it.
The Best Berry filling
5 Cups berries, 3/4 Cup sugar or Splenda, 2 1/2 Tlb cornstarch, 14 tsp salt
1 Cup water.
Put 3/4 cup water in pan with 1 cup berries , salt and sugar . Bring to a boil. While waiting for it to boil add cornstarch to the remaining 1/4 Cup water, stir to dissolve.
Add cornstarch and water mixture to boiling berries, as soon as the berries have cooked and released their juice. Cook 1 minute or until thickened Set aside till cool. When sauce is cool fold it into the reserved 4 cups of berries. Top with whipped cream for a taste of heaven.
To make Blackberry Rhubarb Crisp
Follow the above recipe then after making the sauce I poured the sauce and the rest of the berries in a 9x13 pan and didn't let it cool and added about 4 cups of Rhubarb and topped it with 1 yellow caked mix that has a cube of melted butter stirred into it to make the topping and spread it over the top. Baked it at 350 for 1 hour. It's to die for!
I am really enjoying my garden and having the time to experiment with tasted and ingredients.
Saturday we went to see Cody play football. His team scored a touch down when he was playing quarter back and his receiver was Cader Dunkely. That was their only touch down. The other team made more that one touch down. Last season they started out slow but at the end of the season they were winning their games. Hailey was the score keeper, and the other team kept her busy and also their cheerleader. She was so fun to watch her.
I was really worried about Joe's family who is in Virginia at Langley Air Force Base. Irene the hurricane passed right over him. I called him up Saturday morning imploring him to leave because he has trees around him and I was worried about the tree falling in on him. He said he was going to leave when there was a break in the weather. But when they were going to leave all the roads were closed due to flooding so they couldn't leave. But all turned out well. They made it through. Joe has a big company that is really interested in hiring him since he is being let go by the Air Force due to his shoulder. The best news that it might bring him out to Colorado Springs CO. I am so excited about that.
Sarah asked me to come and watch her kids in January while she and Andrew go to Hawaii. I am excited about that opportunity to spending quality time with the kids. Another perk will be that I will be able to see Joe and family if they make it out there.
